Lamington Protein Balls With Collagen & Raspberries

OK. Hands down. Without a doubt my all time favourite!!

But whatever you do.. make sure to double the batch because the only regret will be not making more. Think clean and healthy lamingtons, with fresh raspberries and a hefty dose of Organic Hydrolysed Collagen Peptides. 

Need I say more?

This recipe makes 12 balls.

Ingredients
1 cup organic desiccated coconut
3/4 cup almond meal (ground almonds)
1/3 cup Baeli Collagen Peptides Powder
1/3 cup raw organic honey
1 tsp. vanilla extract
2 tbsp. melted organic coconut oil
2 tbsp. filtered water
Pinch salt
12 fresh organic raspberries 

Icing
2 tbsp. melted organic coconut oil
2 tbsp. organic cacao powder
1 tbsp. raw organic honey  
Extra coconut, for coating

Method
Step one:
Mix all ingredients for the balls (except raspberries) in a bowl and then refrigerate 2-3 hours to firm up.

Step Two: Divide mixture into 12 equal portions. Create a little “patty” with your hands and make a little well in the centre. Pop a raspberry in then enclose it into the mixture and make into a ball.

Step Three: Make the icing by mixing the ingredients together.

Step Four: One by one, coat a ball in chocolate and use a fork to remove, tapping off excess. Immediately coat in coconut (use a bowl and shake it around, super easy).

Step Five: Repeat with each ball. Gently warm the chocolate in the microwave if it starts to thicken.
