I found this beautiful recipe on Pinterest and tweaked it ever so slightly and it turned out better than I expected.

Ingredients:
1 1/2 cups medjool dates
(pitted, soaked and softened)
2 large eggs
1 cup 100g almond flour
1/4 cup Baeli Collagen powder
1/3 cup cocao powder
1/2 cup cacao chips
1/2 tsp baking soda
1 tsp vanilla extract
2/3 cup coconut oil
Good pinch of salt
Method:
Step one: Preheat oven to 175°C
Step two: Soften the dates by removing the pits and soaking them in hot water for 5 minutes.
Step three: Drain the dates and blend them with coconut oil, eggs, and vanilla until smooth and creamy.
Step four: In a separate bowl, mix the almond flour, cocoa powder, baking soda, and salt until well combined.
Step Five: Slowly fold the date mixture into the dry ingredients until fully incorporated.
Step Six: Add chocolate chips or chopped nuts (optional) for extra flavour and texture.
Step Seven: Line you 8×8 inch baking pan with baking paper, then pour in the batter.
Step Eight: Bake for about 25 minutes until the top is set and slightly cracked, but still fudgy in the middle.
Step Nine: Let the brownies cool before devourering.
