Apple Strudel Clean Collagen Chia Pudding

Looking for a way to sneak in protein for breakfast? This one is quick, easy and CLEAN.
Just how we like things around here!! It’s giving Apple Strudel with a beautiful hit of Collagen, and there is really not much that you can mess up.

Makes 2 serves.

Ingredients

5 tbsp chia seeds

1 cup apple juice (fresh or cold-pressed)

½ cup coconut yogurt

2 scoops Baeli Collagen (approx. 20g)

1 small apple, diced

¼ tsp ground cinnamon

2–3 tbsp filtered water

Method:

Step one: Stew the apples. Add diced apple, cinnamon, and filtered water to a pot. Simmer for about 5–7 minutes until soft, then set aside to cool.

Step two: Make the chia base. Whisk apple juice, coconut yogurt, and collagen together until smooth. Stir in chia seeds.

Step three: Let it thicken. Leave to sit for 10 minutes, stir again, then refrigerate for at least 1 hour or overnight.

Step four: Assemble. Layer or top chia pudding with stewed apple and a spoon of coconut yogurt.

Texture tip

If it’s too thick, add a splash more apple juice or water before serving. If it's too runny add more chia seeds
